The Coffee & Magic Verdict
Casey's Corner is one of those places that feels iconic because of where it is rather than because the food is exceptional. A hot dog on Main Street, with the baseball theming and the castle end of the street just outside, absolutely feels like part of the Disneyland day.
The actual food is much less consistent. The hot dogs can be satisfying when they are hot and fresh, but soggy buns, lukewarm sausages, weak toppings and the price can quickly make something very simple feel poor value. When the food is hot and fresh it does exactly what you want. When it is not, it can feel like a lot of money for something very basic.

The other issue is popularity. Casey's can become extremely busy around lunch and again before the evening show, and seating does not always keep up with demand. That is a lot of friction for a meal that is fundamentally a hot dog and fries.
Rankings
We would still use Casey's because it is convenient, familiar and very Disney, but we would not stand in a huge queue purely for the food.

What eating here is actually like
This is fast, noisy Main Street quick service. You order at the counter, collect the food and then compete for indoor or outdoor seating. At quieter times it is easy and fun. At peak times it can feel like everybody in the park has had the same idea at once.
The location is the big advantage. You can eat without moving far from the centre of the park, and it works well when you want to stay close to a parade route or evening-show position.
What we'd do
We would use Casey's outside the main rush, particularly if we were already on Main Street and wanted something familiar. If mobile order is available, we would check that before joining a physical queue.
If the queue was stretching out or seating looked impossible, we would move on. The convenience disappears very quickly once the wait becomes substantial.
